Welcome to my horse blog, Desert Horses. We live in the desert southwest, near Palm Springs, CA, but board our horses up in our local mountains where it is cooler in the summer. I have 4 horses, all rescues. Here is the ranch up the mountains where the horses stay.

Healthy eating and sunflowers







After eating so much food over the holidays, my jeans are tight...(sigh...). I need to start walking every morning, but it is still dark when I leave for school and I haven't quite figured out how to fit in a walk before I leave for school. And, I'm too tired in the afternoons. Last year, a coworker and I walked for 30 minutes of our lunch break (we get an hour), but she has a different grade level and a different lunch than mine this year, so we haven't been walking, although I'm thinking about asking her if she wants to do it for 20 minutes. I'm getting NO exercise at all, except for hauling 40 pound bags of dog food and shredded beet pulp around up at the ranch. I DID get out last weekend and do some yard work and I have a 3 day weekend this coming weekend, so I'm hoping to really push myself. And, hubby and I are eating healthier foods. See what I mean? Sliced veggies, topped with olive oil, and sprinkled with a salt/pepper blend, roasted at 400 degrees for about 10-15 minutes, depending on how thick you slice them! That night we had sliced red potatoes, zucchini, sweet onions, and vine ripened tomatoes. Yum, yum! He brought home two racks of lamb from Fresh & Easy, so we had this meal for two nights. Last night he made homemade spaghetti sauce with whole wheat pasta, and bought all the ingredients at Fresh & Easy. Nuzzling Muzzles was commenting about the lines at the grocery store and her post got me thinking, "You know, I hardly EVER shop at a regular grocery store any more!" We both stop and shop and Fresh & Easy! There are NO cashiers there. You scan your items, pay for them, bag them, and out you go! If I need something else, or some organic produce, I stop at my local health food store. NO more Vons, Albertsons, or Ralphs! (and their high prices!) And, on a happy note, my first sunflower of the season opened early this week! There are three more buds ready to open.

Beautiful sunflower! Healthy eating is rewarding, although it does take some thought and effort. Is there anyone else at school who'd be willing to walk with you? Good luck!

Get in the arena with the horses and chase them around a bit. That'll give you some GOOD exercise. ;o)

Oh, I wish I could say the same -- never shopping at a traditional grocery store. And since I live in a tourist trap the prices are unbelievable.

Is the beet pulp for the horsies? If so, how/here do you source this?

That looks like a GREAT dinner. I'm going to try it, too. I'm cutting back as well--tight jean syndrome. Yuck. I absolutely hate the feeling. The holidays just really get you into the eat everything all the time mode--everywhere you go, people want to FEED you candy, cookies, roasts, hams, potatoes, stuffing, steaks, green bean casserole...and on and on. It's like two months of constant feasting and no activity because of the COLD.

Yum. Good idea. I was a raw foodist for a while, but it's hard in the cold weather. I yearn for hot food! This is the perfect solution.
